Balsamic vinegar is a very precious condiment that comes from grapes, which acquires a unique flavour and appearance through a process of aging and continuous care, achieving Italian food excellence. We produce Traditional Balsamic Vinegar of Modena DOP (Protected Designation of Origin), made only with the cooked must of Lambrusco and Trebbiano grapes from the province of Modena, according to strict production guidelines, and aged in fine wooden barrels for years. We also produce Balsamic Vinegar Modena PGI (Protected Geographical Indication), made with cooked grape must from 7 regional vines, wine vinegar and a dash of 10-year aged vinegar, aged in wooden barrels for varying periods of time.

TRADITIONAL BALSAMIC VINEGAR OF MODENA DOP

For Traditional Balsamic Vinegar of Modena DOP,
cooking the must is the first step in a long process of transformation.
It takes place over direct heat
at a temperature of 80 degrees Celsius for several hours and reduces
to about two-thirds of the original must mass. In this way, the must loses its natural tendency to transform into wine. After cooking, we move onto aging
in wooden barrels of different capacities, never for fewer than 12 years. And when the wait lasts over 25years, the result is the Extravecchio (extra aged),
a pleasure without compromise. Every batch of the DOP products are certified by a committee of experts ofthe Balsamic Consortium.

The PGI production process
involves the use of cooked must of indigenous grapes, and wine vinegar.
This product ages in large wooden barrels in the province of
Modena and is certified by experienced technicians and tasters.

We produce both Traditional Balsamic Vinegar
of Modena DOP and Balsamic Vinegar of Modena PGI.

Are your products natural?

Yes, absolutely. All of our products are natural, with no additional thickeners, dyes, antioxidants or caramel. Suitable for all diets.

Do you produce the balsamic vinegar?

Yes, we are an agricultural society, producing our own balsamic vinegar. The raw material and the product both come from the vineyards of our property. Our balsamic vinegar is 100% Italian.

Do you sell online?
